pappa al pomodoro, the original TUSCAN RECIPE

A dish of peasant origin, it represents one of the most famous dishes of the Tuscan tradition and you can taste it in its original version on our food tours in Florence and Pisa.

Here is the recipe to try to make at home the pappa al pomodoro.

Ingredients of pappa al pomodoro

  • 300 grams of stale homemade bread
  • 500 g ripe or peeled tomatoes
  • 2 cloves of garlic
  • A tuft of basil
  • 1 liter of brood
  • Extra virgin olive oil
  • Salt
  • Pepper

Preparation

Put some oil in a pot and add the garlic cloves. When the garlic has taken color, add the tomatoes, already cut into pieces and deprived of seeds, and the basil. Add salt, pepper and cook for about 15 minutes.

Pour in the boiling broth and then add the roughly chopped bread.

Cook for another 10 minutes and then turn off the heat. Leave the food in the pot for 15-20 minutes and then serve on the plates.

The pappa al pomodoro should be enjoyed warm and seasoned with a drizzle of good quality extra virgin olive oil.
